Acidic Calcium Sulfate (ACS) is produced by the combination of sulfuric acid, calcium sulfate, and calcium hydroxide under controlled environmental conditions. It is produced from food-grade materials that have the US Food and Drug Administration classification of Generally Regarded As Safe (GRAS). Chemical analysis of the blend will demonstrate that it is an ion blend of calcium and sulfate. Most of the calcium hydroxide precipitates out during the process.
ACS is odorless, colorless and tasteless. The advantages of acidulating food without affecting taste has been sought by food companies for decades because acidulated foods are less expensive to produce and more tolerant of temperature abuse.
One remarkable feature of ACS is that these solutions are not destructive to skin. A 1.0 pH ACS can be held in ones hand without harm to the skin. Not only are these products safer for workers to handle, they can be used on food in a way that has not been possible before. For example, when most acids are added to starch based or starch containing products, the starch is hydrolyzed, resulting in reduced product quality or the inability to form and maintain a shape. This is not the case with ACS. At typical addition rates, processors will most likely not see any changes in product or processing conditions.

Acidic Calcium Sulfate:
- Contains near-saturated, saturated, or super-saturated calcium,
sulfate anions or variations thereof
- Contains “complex ions” containing calcium, sulfates, and/or
variations thereof
- “Complex” – a composition wherein individual constituents are
associated
- “Associated” – constituents are bound to one another
covalently or non-covalently, the latter as a result of hydrogen bonding or other inter-molecular forces
- “Constituents” - may be present in ionic, non-ionic, hydrated or
other forms
- Therefore, “pHresh” does not have the same dehydrating behavior as
saturated calcium sulfate in sulfuric acid having the same normality
- Non-volatile at room temperature
- Much less corrosive to human skin and other materials than sulfuric
acid with calcium sulfate having the same normality

Acidic Calcium Sulfate Ion Complex
- Oligomeric ion complex held together by chelated rings with sulfate
bridges
- Complex appears to function as a large anion
- Ion complex is surrounded by a large solvation sphere. Each calcium
has four associated H3O+ ions, thus ACS is very acidic
- Bisulfate ions are exchangeable, allowing the ACS anion to cap
proteins, thus reducing relative corrosive effects to meat and skin and some metals
